Jorge Valderrama

Chef Jorge Valderrama, born in Chile, is currently based in Bali where he manages his first restaurant, the Cantina Rooftop, alongside his friend and fellow chef Cristian Encina. With a passion for culinary arts, Jorge has traveled the globe, studying Culinary Arts in Lima, Peru before embarking on his professional journey. He has worked in various restaurants across countries such as Australia, New Zealand, and Singapore. Jorge’s extensive experience in different culinary traditions and cultures has fueled his desire to understand and innovate with diverse cuisines, creating unique dishes. When he’s not in the kitchen, Jorge enjoys his hobby of surfing, even embarking on a 6-month surfing trip in West Indonesia.

Chef Jorge Valderrama, lahir di Chili, saat ini tinggal di Bali dan mengelola restoran pertamanya, Cantina Rooftop, bersama teman dan sesama chefnya Cristian Encina. Dengan kecintaannya pada seni kuliner, Jorge telah berkeliling dunia, mempelajari seni kuliner di Lima, Peru sebelum memulai perjalanan profesionalnya. Ia telah bekerja di berbagai restoran di berbagai negara seperti Australia, Selandia Baru, dan Singapura. Pengalaman Jorge yang luas dengan tradisi dan budaya kuliner yang berbeda memicu keinginannya untuk memahami dan berinovasi dengan beragam masakan, menciptakan hidangan yang unik. Saat tidak berada di dapur, Jorge menikmati hobinya berselancar, bahkan melakukan perjalanan selancar selama 6 bulan di Indonesia Barat.
